Germano’s Very Hot Chilli Sauce with Garlic and Olive Oil

Germanos Garlic OilI am a massive chilli fan and I love all things chilli, but every once in a while a product comes along which absolutely floors me. I’m really happy to tell you that the Germano’s in garlic and olive oil is just that.

Opening the lid, the first thing that hits you is a delicious caramel garlic/chilli aroma, very reminiscent of South East Asian style condiments. The sauce, which has a beautifully rich orange brown colour is a suspension of ground caramelised garlic and chilli’s in olive oil.

In short, the flavour is exquisite. There is plenty of heat here, but this is not an extreme sauce by any stretch of the imagination. More an essential ingredient for any foodie, chef or chilli fan. This sauce has been perfectly balanced so that the chilli does not mask the beautiful honey/toffee/caramelised garlic flavour in the least. The first thing I did with it was simply spread some over a piece of brown bread which I ate with a thin layer of mature cheddar. Delicious.

Try dressing some tagliatelle with a simple fresh tomato sauce and drizzling this over the top to your taste. Really good. However, my favourite use of this sauce so far was when I added about a teaspoon to a bowl Chinese chicken noodle soup before serving. Using it raw and warmed like this means that the flavour develops fully in the dish and none of it gets cooked out. I honestly can’t imagine being without this sauce now, it’s a permanent addition to my ingredients cupboard.
